Date Nut Energy Balls
Simple (and yes, overdone), but perfect.
Servings: ~25
INGREDIENTS:
10 pitted medjool dates (or remove pits)
1/2 cup raw organic almonds
1/4 cup raw organic cashews
1/4 cup raw organic walnuts
1/4 cup unrefined coconut oil
unsweetened finely shredded coconut, for rolling
STEPS:
toss all the ingredients in the food processor, minus the shredded coconut. pulse until mixture is well ground and almost a coarse paste
Pour the shredded coconut onto a plate or flat surface and spread evenly.
Scoop out the mixture with your hands and form small, 1 to 1.5 inch balls. Roll them in the shredded coconut until nicely dusted.
Store and chill in the refrigerator. Enjoy!
