Date Nut Energy Balls

Simple (and yes, overdone), but perfect.

Servings: ~25

INGREDIENTS:

  • 10 pitted medjool dates (or remove pits)

  • 1/2 cup raw organic almonds

  • 1/4 cup raw organic cashews

  • 1/4 cup raw organic walnuts

  • 1/4 cup unrefined coconut oil

  • unsweetened finely shredded coconut, for rolling

STEPS:

  1. toss all the ingredients in the food processor, minus the shredded coconut. pulse until mixture is well ground and almost a coarse paste

  2. Pour the shredded coconut onto a plate or flat surface and spread evenly.

  3. Scoop out the mixture with your hands and form small, 1 to 1.5 inch balls. Roll them in the shredded coconut until nicely dusted.

  4. Store and chill in the refrigerator. Enjoy!
